Tasting Note
Colour:
Medium red/purple with a clear rim edge and bright hue.
Nose:
Deep, ripe blackberry and blueberry aromatics. Sarsaparilla and mint peek through as an underlying bouquet of bay leaf and oak spice wafts by.
Palate:
This red wine tastes like Bordeaux in a ripe vintage! Plush, yet whilst half-rich in flavour it is also half-savoury. Good middle palate acidity keeps the fruit in line; then come furry, friendly tannins marching towards the palate’s end; finally comes an acid afterglow and a dry, long finish.
Food Pairing
Pot of stewing steak cooked with celery and lemon thyme, a spoonful of tomato paste, and the tiniest touch of smoked hot paprika
